How about if you add categories to the form, but use CSS to hide it (display: none;) and use the Detect defaults from current page options to detect what category is being used?

Looking at the page, I can see 2 S&F forms and one results section (relating to the first of the forms). I can see a number of rows from Visual Composer, but I can see no posts? What post type(s) is the search based on? Maybe you could take (and crop) some screen shots of the setup tabs for the search form with ID 6397?

IF I understand you correctly (I hope that I do), then I know that, with the theme I normally use, this is possible, but with some coding. I do not know which theme you use, but coding WILL most probably be necessary. You seem to accept this, showing us your coding so far. Let us deal only with Q1 now, and then deal with Q2 after resolving Q1?

What theme are you using, what Display Results method are you using?
