Hi Rory
RE the colour field.
It will only be populated with results that exist (this is the way post meta fields work) – S&F will search your posts for all the possible values (which means they must be assigned to a post) and then it builds the options from that.
There are other ways to achieve what you want, you could use a custom taxonomy field instead, which will pull all the options available, rather than checking to see what is assigned to your posts.

I don’t understand why this was previously showing values that had no products assigned to them.
Also if you select the VEHICLE TYPE dropdown box it still displays options that have no products assigned to them. This is also a post meta field so what is the difference? – https://alotsoldvehicleauction.com/vehicle-search-form/

I’ve tried these settings for the colours but it’s still only showing populated values. I’ve tried switching hide empty on and off and rebuilding the cache but it’s still the same.
I’m just confused as to why Zero values are displaying under the post metas for ‘Fuel Type’ and ‘Vehicle Type’ but not for ‘colours’ when the settings are all the same.
I may just have to leave ti if it is not possible. I just don’t understand the inconsistencies and my client is very particular.
