    Because Product Category is actually a custom Taxonomy, so instead add a Taxonomy field to the Form UI, and then select Product Category from the list.

    Category (and Tag) should only be used when searching ‘Posts’. Here is a video to show Product Category being added to the form:

    You can use Product Category only once in the form.
