But I’d only like to display the most recent post in each category. After that, I’d like the featured posts to fall into the normal sort order. Thoughts?
What is the normal sort order that you want to use? The problem is that there is no sorting of taxonomies possible in our plugin settings.
You might need to set custom sort conditions in this filter:

You would need to work out the logic yourself, or hire a coder, but I think it could be done this way.
