    I need two groups of checkboxes, with headers in between. Is it possible to do this within a given taxonomy or field, such as Categories?

    It might be possible using javascript, but it would then fail CSS validation, which in turn may well cause problems with screen readers, which means visually impaired visitors may have problems.

    Is it possible that your Category needs splitting into 2 different taxonomies (which is relatively easy to do)?

    If splitting it into two taxonomies will allow the grouping, I’m fine with that. Will something like CPT UI allow me to make a new taxonomy for posts?

    Yes. This post tries to explain this a bit better (you can use a plugin to switch category terms from media-category to any new taxonomy that you make, so it is not so hard to do). It is a really awful preachy lecture I wrote:
