Great to speak with you Wayne. I can see the issue and, as we discussed, there is no simple solution. Because the posts have multiple countries and multiple regions, when you select one county, a region may still show as a choice that isn’t in that country.
In the longer term, the only solution would be to use an Advanced Custom Fields Repeater Field (or if Toolset or Pods has a similar type of field, whatever they offer). This is the free version ACF (but it does not have the repeater field included):

The free version of ACF will shortly go to V5 to be ready for Gutenberg.
The (premium) Repeater Field addon is this:

which, as I said, is included/bundled in that other theme.
This type of field allows you to pair the country with the region.
However, as I said, we do not support the repeater field at this time. We may do so as an addon for V3, but that will (IF we do) be some time away yet. As for Toolset and Pods, we only support the basic features of those two plugins. Again, that may change.
