Hi Trevor,
I have finally decided to completely rebuild my site.
I have installed a local WAMP server, and then WP 4.8.1.
I have imported my posts and taxonomies.
I have created a new theme from scratch.
I have uninstalled most of the plugins.
I have uninstalled S&F (4.3.3) and deleted it.
I have re-installed S&F and recreated a form.
The cache has rebuilt normally.

I still have the same problem : in the search form, every category or taxonomy field show a count of 0 result. When I use the search field, no result either.
When I check the categories in the worpdress admin, they do contain posts.
So it is a mystery. I don’t know what to do…

It is a much better way to develop locally, it is free and you can have a live pipe to the internet for another user to preview/view.
Use a default WP theme and plugins (like CPT UI).
