Hi – I’m using Search & Filter Pro to add a custom form for listings in Directories Pro. I can add Taxonomy, Category and Tag filters (DP uses a custom post type for directory listings), but in Post Meta, none of the fields for DP are showing up in the list of available fields. Is there a way to help S&F Pro find these fields and make them available for the form?

It would depend on where this meta data is being stored. The WordPress Codex says that it should be stored in the post meta table, but, from what you say, this might not be so. If you use a database management tool and search the database for a string in such a field, you should be able to see what table it is in.
